Avarekaalu sambar is a seasonal dish which tastes delicious with ragi mudde and rice.
Ingredients for avarekaalu sambar:
Avarekaalu /hyacinth bean – 1 cup
Toor dal – 2 tablespoon
Coconut – 1/4 cup
Sambar powder – 2 tablespoon
Tamrind juice – 2 tablespoon
Salt
Oil – 1 tablespoon
Mustard – 1 teaspoon
Cumin – 1 teaspoon
Asafoetida/hing – 1/4 teaspoon
Curry leaves – 2-3 stick
Dry chilli – 3
Procedure :
Add avarekaalu, toor dal and 3 cups of water to a cooker without adding salt. pressure cook for 3 whistles.
Meanwhile, take coconut in a mixer jar and add sambar powder, tamrind juice and grind it into a fine paste.
Depressurize the cooker and transfer it into a container in which you’ll make sambar.
Add the above prepared coconut paste to the container and mix well by adding salt.
Let it boil until all the froth formed in the top layer gets absorbed into the sambar.
In a oggarane bowl, take oil and let it heat for 1 minute.
Then add mustard and let it splutter out.
And add cumin, curry leaves, dry chilli and asafoetida.
Add this mixture to the sambar and stir well.
SECRET TIP :
Adding toor dal is totally optional but that is what makes the sambar thick and consistent.
I have used home made sambar powder. You can use ready made sambar powder which is available in the market or check out our sambar powder recipe.
