LEMON RICE
Lemon rice is one of the most popular SOUTH INDIAN RICE RECIPES. Making lemon rice is one of the simplest and less time consuming BREAKFAST RECIPES. If you already have some pre-cooked rice then the dish gets done in less than 15 minutes. Lemon rice is made by mixing the gojju with white rice. Lemon tastes good on its own. But you can also enjoy it with pickle, chutney or papad.
During festival, we make the same dish but without onion for neyvedyam.

Ingredients:
1. Rice – 1 Cup
2. Oil – 1/4 Cup
3. Mustard – 1 Teaspoon
4. Bengal gram – 2 Teaspoon
5. Urad dal – 1 Teaspoon
6. Onion – 2
7. Green chilly – 5
8. Curry leaves – 6-7
9. Turmeric
10. Coriander
11. lemon juice – 2 Tablespoon
12. Grated Coconut – 1/2 Cup
13. Salt
Procedure for making lemon rice:
1. Cook rice by adding 2 cups of water to 1 cup of rice in a cooker.
2. Take oil in a pan and let it heat.
3. Add mustard, bengal gram, urad dal and saute it till the bengal gram turns golden brown.
4. Add onion, green chilly, curry leaves and fry until the onion turns golden brown.
5. Add turmeric and mix well.
6. Once it’s done, turn off the stove and add coriander.
7. Take the cooked rice in a bowl and add the above prepared mixture.
8. Add salt and lemon juice as per your taste.
9. Add grated coconut and mix well.
Serves: 3
If you like, you can fry ground nut seperately in a pan and add while mixing.
P.S: Coconut and Ground nut is optional but these are the taste enhancers.
SECRET TIPS:
1. Add bengal gram before urad dal since it takes more time than the latter one. For your convenience i have listed the ingredients in an order in which it has to be added. 2. Never ever cook lemon. It becomes bitter.
