SABUDANA KHEER / SABBAKKI PAYASA
Sabudana kheer or sabbakki payasa is the mildest kheer or sweet of all. If you want to make something sweet other than usual common sweets in less time you can try this recipe. This is also good for health and helps in weight loss. This helps your body to cool down during summer.

Ingredients for making sabudana kheer:
1. Sabudana – 1/2 cup
2. Milk – 2 cups
3. Water – 2 cups
4. Sugar – 1/2 cup
5. Cashew – 1 tablespoon
6. Raisins – 1/2 tablespoon
7. Cardamom ( crushed) – 1/2 teaspoon
8. Badam powder – 1 tablespoon
Procedure for making sabudana kheer:
1. Soak sabudana with 2 cups of water for 30 minutes.
2. Boil milk in a pan and add soaked sabudana along with water.
3. Stir occasionally.
4. Once milk starts becoming thick, add sugar, cashew, raisins and cardamom and mix well.
5. Add badam powder in the end.
6. Let it simmer for 15-20 minutes and serve hot.
SECRET TIPS:
Don’t over soak or over cook sabudana or else the pearls break or kheer becomes paste.
