ALOO STUFFED KULCHA
Aloo stuffed kulcha is also known as Amrithsari kulcha. This is one of the famous punjabi recipe. Kulchas are popular in North India and Best kulchas are made in Amritsar. You can serve it with chole, spicy tamrind chutney or just with a curd since the stuffing is spicy.
Ingredients:
1. Maida/ all purpose flour – 1 cup
2. Milk – 1/2 cup
3. Yeast – 1 teaspoon
4. Sugar – 1 teaspoon
5. Potato – 2
6. Kashmiri chilly powder – 1 tablespoon
7. Coriander powder – 1/2 tablespoon
8. Cumin powder – 1/2 tablespoon
9. Garam masala – 1/2 tablespoon
10. Amchur powder – 1/4 tablespoon
11. Coriander seeds(crushed) – 1 tablespoon
12. Coriander leaves – 1/2 cup
Procedure for making aloo stuffed kulcha:
1. In a mixing bowl, take milk, add yeast and sugar.
2. Let the yeast get activated for 5 minutes.
3. Add a pinch of salt and maida and bring the flour into firm dough. Let it rest for 2 hours.
4. Boil the potato and mash it in an another mixing bowl.
5. Add chilly powder, coriander powder, cumin powder, garam masala powder, amchur powder, salt and coriander leaves into it and mix well.
6. Once the dough is ready, take a small ball of dough and roll it into a small disc.
7. Take 1-2 tablespoon of potato mixture in the rolled dough, close the edges and roll it again.
8. Sprinkle some crushed coriander, coriander leaves and chilly powder on top and press it gently.
8. Pre heat the oven at 180°c and bake the kulchas for 15-20 minutes.
9. Serve it with butter on top.
SECRET TIPS:
Stuffing should be dry and the dough should be soft.
