Hitikida avarekaalu sambar is one of the hot favourite recipes in avarekaalu season. In this recipe, we make 2 paste seperately. It is a tasty and also very easy to make recipe.
Ingredients for hitikida avarekaalu sambar:
Hitikida avarekaalu – 1 cup
Onion – 2
Ginger – 1 inch
Cumin – 1 teaspoon
Garlic – 7-8 cloves
Curry leaves – 2 sticks
Coriander powder – 2 tablespoon
Coconut ( grated) – 1/4 cup
Cinnamon stick – 2 inch
Clove – 2
Coriander leaves – 5-6 sticks
Poppy seeds – 1 tablespoon
Oil – 1/2 cup
Cumin – 1 teaspoon
Mustard – 1 teaspoon
Dry chilly – 4
Butter – 1 tablespoon
Turmeric powder – 1/4 teaspoon
Sambar powder – 2-3 tablespoon
Procedure :
In a pan, add 2 tablespoons of oil, onion, garlic, cumin, ginger, curry leaves and roast it until the onion turns to golden brown color.
Let it cool and grind it into a fine paste by adding coriander powder and little water.
In the same pan, add 1 tablespoon of oil and once it’s hot, add mustard and cumin seeds and let splutter.
Furthermore add hitikida avarekaalu and butter. Fry until it leaves out raw smell.
Add the above prepared paste to the pan and fry until a nice aroma.
Add hot water only until the hitikida avarekaalu just immersed. And allow it to boil until avarekaalu becomes soft.
Let it boil by adding sambar powder and turmeric powder.
Meanwhile, make a paste of coconut, poppy seeds, cinnamon stick, clove and coriander leaves.
Add the paste to the pan and mix it well.
Boil until everything blends completely and it’s ready to serve.

Butter is the secret ingredient!!
