1. Curd – 1/2 litre 2. Carrot(grated) – 1 whole 3. Uddin vada – 5 4. Coriander – 2 table spoon 5. Boondi – 1/2 cup

Before going to dahi vada let’s see how to make soft and crispy uddin vada. Procedure for making vada goes like this:

1. Soak urad daal in water for just 1/2 an hour. 2. Grind the urad daal into fine paste without adding water. 3. Add pepper in the last round of grinding and shift the batter to a bowl. 4. Add salt, baking soda, rice flour, chopped coconut, coriander, onion, green chilly to it and mix well. 5. Take a handful of batter in the left hand, make a hole in the centre and deep fry until it becomes golden brown.

Procedure for making quick dahi vada:

1. In a bowl, soak uddin vada in curd for 10-15 minutes. 2. You can find my “uddin vada” recipe here. Uddin vada recipe 3.  Once the vada is soaked for 15 minutes take in a large bowl with 4 table spoon of curd. 4. Garnish it with carrot, coriander and boondi. You can add chopped green chilly or pepper powder if you want it to be more spicy.
