TOMATO RICE

Tomato rice is a one pot recipe made with rice, tomato and some mild spices which is yummy and delicious. This recipe is super quick to make and gets ready in less than 30 minutes.

Ingredients:

1. Tomato –            4-5 2. Rice –                  1 Cup 3. Oil –                      3 Table spoon 4. Mustard –            1 Tea spoon 5. Bengal gram –   2 Tea spoon 6. Onion –                2 7. Curry leaves 8. Chilly powder – 2 Table spoon 9. Coriander powder – 1 Table spoon 10. Grated coconut –  3-4 Table spoon 11. Salt 12. Turmeric powder

Procedure for making tomato rice:

1. Take oil in a cooker and let it heat. 2. Add mustard, bengal gram,curry leaves, onion and saute it until the onion turns golden brown. 3. Add tomato and fry until the tomato becomes soft and leaves a gravy texture. 4. Add rice and fry for 3 minutes. 5. Add 2 cups of water and let it simmer. 6. Add chilly powder, coriander powder,grated coconut, salt, turmeric powder and stir well. 7. When it starts boiling, close the lid and let it cook for 15- 20 minutes. 8. Once it’s done, mix well and serve. Serves: 3

SECRET TIPS:

1. When you add rice, give it a fine 3 minutes fry so that the tomato rice will be dry and not sticky. 2. And also, since tomato itself leaves out water so no extra water for it to be dry.
